Storage for Freshness

Retaining the fresh taste of shelled pecans can be attained by storing at room temperature no longer than a couple of weeks.  After this, you should place the pecans in the refrigerator.  For prolonged storage, your home freezer is the best bet.  They should remain very good for cooking if frozen for up to two years.

Pecans left in the shell should retain their freshness for 2 to 3 months.   After this, they will need to be shelled and placed in the freezer.

Air-tight containers such as plastic containers or sealed plastic bags are best for storing in the refrigerator or freezer.

If traveling, never leave shelled pecans in the car when the temperature exceeds 80F for more than a few minutes.  They tend to sweat in the bag and will start to mold.

These guidelines are our personal experiences with pecans.   Conditions in other parts of the world could cause some variations.
